A perfect morning snack!

¾ cup shredded zucchini (excess water removed)
½ cup shredded apple (excess water removed)
½ cup shredded carrot (excess water removed)
4 Tbsp butter, melted
¼ cup applesauce
½ cup sugar
1 tsp vanilla
1½ cups white whole wheat flour
½ tsp baking soda
½ tsp baking powder
1 tsp cinnamon
½ tsp ginger
- Mix first 8 ingredients in a large bowl and stir until well combined.
- Add remaining ingredients and stir until just mixed.
- Scoop into greased muffin tins.
- Bake at 350 degrees F for 20-25 minutes or until inserted toothpick comes out clean.
